One to Share – JAMBALAYA WITH SWEET POTATO WEDGES

Big group coming over? no problem. This Jambalaya is perfect for a dinner party and will leave your guest wanting seconds, thirds, fourths and yes probably even fifths. It’s one of my super party favorites. You can add ingredients to make up the numbers and it is so easy to make you just throw it in all in the pan, let it simmer and you can host the night away with no worries about timers and checks.

Ingredients for 4 people

Jambalaya

2 Chicken Breasts

Chopped Courgette

Chopped Mixed Peppers

1 Green Chilli Chopped

1 Red Chilli Chopped

2 Handfuls Spinach

2 Chopped Garlic Cloves

1 Chopped tin tomatoes

1 Onion (red)

Handful chopped Mushrooms

Coconut Oil

Salt

Pepper

Chilli Flakes

Brown Rice

Sweet Potato Wedges

2 Sweet Potatoes

Paprika

Sunflower Oil

Get Cooking:

First things first, your sweet potato wedges. Chop your sweet potatoes into 1/4’s then 1/2 them again. Get a mixing bowl and chuck them in. Lightly cover with a tbsp of Sunflower Oil and toss them around a little. Sprinkle some salt and pepper and finally, some Paprika.

I like to add a little garlic salt too but that’s to my taste, I just love garlic.

Lay onto a heated baking tray and pop into a preheated oven of 200ºC. Leave for 20 minutes give them a little shake and turn over then pop them back in for another 20 – 25minutes and start on your chicken.

Start to boil your rice and have it ready on the side.

Chop up your chicken season with salt, pepper, and some chili flakes and get it cooking on a medium heat in a tsp coconut oil.

Whilst it is cooking chop your garlic, onions, chilis, mushrooms and throw them in too. Let it all cook up for a little while and mix it around to spread the flavors.

Then it’s time to add in your chopped courgette, peppers and tinned tomatoes. Give it all a stir around pop a lid on and let it cook up over a medium heat. Stir every few minutes.

You will see now it is all very juicy, this is where your boiled rice comes in. Once drained throw that in your pan too, mix it all up and give your wedges a check and your chicken.

Are they ready? Great throw in your spinach to the mix and it will begin to disappear, don’t let it go too far though or it will vanish.

One final mix up and you are ready to serve. I pop it all in a big bowl in the middle and the wedges separately and everyone helps themselves.
